Skinny Cordon Bleu

You guys know you missed me! :)
So this is the skinny cordon bleu that we made! Well, mostly my little sister made it, but I did help! I must say, it was AMAZING! We didn't technically make it completely healthy... the cheese wasn't low fat, but it was mostly healthy ;)

Here is the original pin

What you'll need:
12 thin sliced chicken breasts (I think we just sliced 6 regular breast in half)
salt and pepper
1 egg
2 egg whites
1 Tablespoon water
1/2 cup seasoned bread crumbs
1/4 cup grated parmasean cheese
6 slices sargento reduced fat swiss cheese slices, cut in half
6 slices deli ham, cut in half

We ended up making more breading for ours, but other than that, basically just make the egg wash with the egg and egg whites, and water. Then roll it in the bread crumbs and grated cheese. The rest you just roll up in the breast! Cook at 450 for 25 minutes! Amazing! :)

Sweet Hawaiian Crockpot Chicken

Hey there! It has been awhile, and by awhile I mean I stopped scheduling posts...
Sorry about that.
This is what I actually made today. Like for real today, not I made this a week ago and scheduled it to post today. Ha ha, I just feel so productive when I can do twelve posts in one day and set them all to go one a day for a week and a half :) Don't judge.

So I changed a few steps on this one, well, I added a few steps. As promised, I took a few pictures of the added steps.

What you'll need:

  • 2 lbs. of chicken (about 4 breasts)
  • 1 can of pineapple juice
  • 1/3 cup of soy sauce
  • 1/2 cup brown sugar
  • cornstarch and water
1. First you just throw the chicken, the pineapple juice, soy sauce, and brown sugar into a crock pot for 6-8 hours. The recipe called for one cup of pineapple juice, but my can was only 6 oz. it worked out fine.
2. Strain your juice and scrape off the fat from the chicken.

3. Put the strained juice on stove, and add one tablespoon cornstarch and water. Make sure that your corn starch is COMPLETELY dissolved in your water before you pour it in. 
4. Stir until it darkens and thickens. It doesn't get very thick, but it definitely gets a little more body. 
5. Pour it over your chicken and enjoy!

It was amazing! I would do it in a sandwich next time! We did it over rice, but it would be tastier on a roll! Try it out! Super easy and delicious :)

Roasted Garlic White Sauce Pizza

One of our last days of freedom and we decided we needed some pizza. So of course we turned to our handy dandy pinterest food boards! (Blues clues anyone?)

Here is our finished pizza, as you can see, we didn't put on the onions. Charissa is not a fan of onions....
Here is the original recipe.

So you will need:
  • 2 chicken breasts (cooked, chopped & sprinkled w/ garlic salt)
  • 1 container refrigerated Pillsbury Classic Pizza Crust
  • 1 tablespoon butter
  • 6 garlic cloves, roasted & minced (we used 3, but they were kind of large)
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground black pepper
  • 1/2 cup skim or 1% milk
  • 1/4 cup half & half
  • 1/4 cup fresh grated parmesan cheese
  • 3/4 cup shredded mozzarella cheese
  • 1/4 teaspoon dried/ground thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon + 1 teaspoon (or more) dried parsley, divided
  • 1/2 teaspoon garlic salt
Just a heads up, our sauce was pretty thin, which is fine, but we ended up with some left over. I would suggest adding maybe a little cornstarch to it while it's hot (remember to always mix it with a little water or milk first and make sure it's completely dissolved before adding it to the heat!). We just used the left over as dipping sauce, but in my opinion, it's a little gross if it's cold. 

On a scale of one to ten, I'd say this is about a 2 or three on the easy scale (one being SUPER easy), so don't be afraid since there are a fair amount of ingredients!

I'd also give it at least 3 stars out of 5 for taste! Charissa and I ate almost the whole pizza by ourselves. Which maybe wouldn't have happened if we'd had a side to go with it. I don't know why we never think of sides... does that happen to anyone else?

Tomato Vinaigrette Grilled Chicken

Hello :)
So we made this chicken this week. It was pretty good, oddly, if you pour the vinaigrette over the broccoli it's spicy... but the chicken isn't. Weird.

This was a rough day for me, mostly because I made it hard for myself by expecting things that didn't happen, like the dishes being done. I don't know why the dishes bother me so much. So when I ran to the store to get ingredients for this recipe, I also got Brookside chocolate covered pomegranate deliciousness.
Now before you worry about me eating my feelings, don't worry, I only had a few ;)

Anyway this chicken was really easy. Especially if you have a George Foreman grill.

You'll need:
Cherry tomatoes (1 cup halved)
1 clove garlic
3 tablespoons red wine vinegar
1 tablespoon olive oil
1 tablespoon lemon juice
2 tablespoons water
1 tablespoon red onion (chopped)
salt and pepper to taste
4 chicken breasts

So if you looked at the original recipe, yes, I switched the amounts of red wine vinegar and olive oil. What can I say, our family loves vinegar. In fact, you know how in my big fat greek wedding the dad uses windex for everything? That's what we do with vinegar.

Anyway, you just blend up all the ingredients and stick 6 tablespoons of it in a bag with the chicken for a little while. We only marinaded ours for like 30 minutes, but it was still delicious! Especially if you put some if in on the chicken after you cook it :) Then we just grilled it on our George Foreman, great for this time of year when it's cold outside!

Slow cooker buffalo chicken Nachos :)

This was our Sunday dinner last Sunday. It was AMAZING and let me just say, it's a great set it and forget it meal. And bonus, it's only a couple ingredients :)

Here's what you'll need:
3 chicken breasts
12 oz. bottle buffalo wing sauce (we used Frank's medium)
1 packet dry ranch mix

Put it all in the slow cooker and cook for 7-9 hours on low.

 When the chicken is tender enough to shred, shred it and put it back in the sauce for about an hour :) Ours ended up being about 2 or 3 hours because our Dad dropped by unexpectedly.
We didn't buy any rolls so we just toasted up some white bread and ate it as sandwiches, but you know what's REALLY tasty?

Make some nachos, put the chicken on top and the tomatillo dressing from THIS POST and you get the most tasty nachos I have ever had outside a restaurant
